Thai Quinoa Salad

Ingredients:

-Salad dressing -Green curry paste - 1 tablespoon -Peanut butter - 1/4 cup -Fresh ginger (chopped)- 1 teaspoon -Honey -2 teaspoons -Garlic (chopped) - 2 cloves -Coriander leaves (finely chopped) - 1/4 cup -Fresh lime juice - 2 tablespoons -Olive oil - 2 tablespoons -Water - 1/4 cup -Salt to taste

Salad:

-Lettuce (chopped) - 4 cups -Shredded cabbage - 2 cups -Red bell pepper (thinly sliced) - 1/2 cup -Green onions( sliced) - 4 -Coriander leaves (loosely packed) - 1/2 cup -Carrots (grated) - 2 cups -Cooked quinoa - 2 cups -Peanuts (roughly chopped)- 1/4 cup

Directions:

1. For salad: Take a large mixing bowl and place the lettuce at the bottom. Then add all other ingredients over it. 2. For dressing: Take all the ingredients and blend them together in a food processor and form a puree. 3. Mix the salad dressing with the main salad ingredients and toss them well.
