Sukhi Arbi (Sweet Potatoes)
Ingredients:
4-6 medium size boiled sweet potato (Arbi)
2 fresh green chilies
1/2-teaspoon mango powder
1/2 teaspoon red chilly powder
5-6 fresh curry leaves
3 tablespoon of olive oil
Vrat salt according to taste
Directions:
Heat olive oil and add in curry leaves, chopped green chilies and red chilly powder and stir it well.
Now add to it the boiled sliced sweet potatoes (arbi) and stir-fry them in the pan.
When sweet potatoes (arbi) is half cooked add mango powder and red chilly powder.
Stir well so the powder blends well in sweet potatoes (arbi).
When the sweet potatoes (arbi) are little crispy and turn the stove off.
Garnish with coriander leaves and serve hot.
