Sukhi Arbi (Sweet Potatoes)


  • 4-6 medium size boiled sweet potato (Arbi)
  • 2 fresh green chilies
  • 1/2-teaspoon mango powder
  • 1/2 teaspoon red chilly powder
  • 5-6 fresh curry leaves
  • 3 tablespoon of olive oil
  • Vrat salt according to taste
  • Heat olive oil and add in curry leaves, chopped green chilies and red chilly powder and stir it well.
  • Now add to it the boiled sliced sweet potatoes (arbi) and stir-fry them in the pan.
  • When sweet potatoes (arbi) is half cooked add mango powder and red chilly powder.
  • Stir well so the powder blends well in sweet potatoes (arbi).
  • When the sweet potatoes (arbi) are little crispy and turn the stove off.
  • Garnish with coriander leaves and serve hot.
