Sabudana/Sago/Tapioca – 1/2 cup [ after soaking it becomes 1.5 cups of sago]
Potato – 1 medium
Roasted Peanut – 1/4 cup
Green Chillies – 2
Curry Leaves – 1 sprig
Cumin Seeds – 1/2 tsp
Lemon Juice – 1 tsp
Cilantro – few sprig
Oil – 1 tbsp
Rock Salt – to taste
Directions
Soak sago in just enough water for 4 hours or till it becomes fluffy. To prevent it from going soggy make sure the water is just above the sago level. Drain water and keep aside.
Roast Peanuts, de-skin and blend it till it is of a texture of coarse powder.
Peel potato, dice it and chop green chillies.
Heat oil in a wok or pan and fry cumin seeds till it cracks. Add curry leaves, green chillies and saute for half a minute.
Add potato, cover and cook until potato gets tender.
Add the drained sago, peanut powder and mix well
Cook with lid on for 5-7 minutes on medium flame.
Add salt, cilantro, lemon juice for flavoring, toss well and cook for a more minute.
