Recipe of Pumpkin Protein Pancakes


  • 1/2 cup pumpkin puree
  • 2 eggs
  • 1/2 teaspoon pumpkin pie spice
  • A pinch of baking powder
  • 2 tablespoons vanilla extract
  • Heat a medium skillet over medium heat on the stove till the pan sizzles when water is sprinkled on it.
  • Whisk the pumpkin, eggs, pumpkin pie spice, baking powder, and vanilla extract until well combined.
  • Spread nonstick cooking spray on the skillet and then add in 2-3 tablespoons of the pancake mixture.
  • Spread it into a pancake shape. You can use a metal ring to get the perfect round shape.
  • Cook the pancakes for 1/2 a minute before flipping and then let the other side cook for the same time.
  • Remove from fire and place in a plate. Serve with nut butter, sugar-free syrup or butter.
